HOT SPICED WINE
2 c. pineapple juice 1 c. water 1 c. packed brown sugar Peel of 2 oranges cut into 1/4 inch strips 1/2 c. orange juice 6 whole cloves 4 inch cinnamon stick 3 whole allspice 1/2 tsp. salt 1 bottle dry red wine Heat pineapple juice, water, brown sugar, orange peel, orange juice, cloves, cinnamon stick, allspice and salt to boiling in 4 quart Dutch oven, stirring occasionally; reduce heat. Simmer uncovered 15 minutes. Remove spices and orange peel; stir in wine. Heat just until hot (do not boil). Serve in mugs or heat-proof glasses garnished with orange slice and cinnamon stick, if desired. Note: Hot spiced wine can be covered and refrigerated no longer than one week. Just before serving, heat just until hot (do not boil).

Ambrosia Cake
1/4 cup vegetable oil 2 egg yolks 6 tablespoons water 1 tablespoon grated orange zest 1/2 teaspoon vanilla extract 1/2 cup flaked coconut 1 cup plus 2 tablespoons sifted cake flour 3/4 cup granulated sugar 1 1/2 teaspoons baking powder 4 egg whites 1/2 teaspoon salt 1/4 teaspoon cream of tartar Whipped topping or sweetened whipped cream 1 small can Mandarin orange slices, drained flaked coconut PREPARATION: In a large mixing bowl, combine oil, egg yolks, water, grated orange zest, vanilla, and 1/2 cup coconut. Add sifted cake flour, sugar, baking powder. Beat mixture for about 30 seconds at low speed of electric hand mixer. In a separate mixing bowl, beat egg whites with cream of tartar and salt until stiff peaks form. Fold into first mixture gently but thoroughly. Pour batter into an ungreased square 8x8x2-inch baking pan. Bake at 350° for about 30 minutes. Cool upside down for 1 hour. Loosen from pan and split horizontally into 2 layers. Fill ambrosia cake and top with whipped cream. Decorate ambrosia cake with orange slices and sprinkle with more coconut.

All Day Crockpot Delight Recipe
Ingredients 2-3 lbs. Boneless chuck, cut into 1 inch cubes 1/2 c. Flour 1/4 c. Butter 1 onion, sliced 1 tsp salt 1/8 tsp pepper 1 clove garlic, minced 2 c. Beer 1/4 c.Flour Directions Coat beef cubes with the 1/2 cup flour. Brown in melted butter. Drain off excess fat. In crock pot, combine browned meat with onion, salt, pepper, garlic and beer. Cover and cook on low 5-7 hours (all day) until meat is tender. Turn control to high. Dissolve remaining 1/4 cup flour in small amount of water. Stir into meat mixture, cook on high 30-40 minutes. Serve with rice and salad
